You might want to check out the forums at 6502.org as well - there's a lot of stuff about the 6502 in general, and there should be a few things there that could be turned into projects for your Micro-Kim.

The "8-bit baby" (http://www.jschoenfeld.com/products/8BitBaby_e.htm) might be useable - it has a Vic-20 compatible connector, which appears to have the correct spacing (3.96 mm = 0.156*25.4 mm).

I'm not sure how easy this board is to obtain in the US.

You probably don't want to use a 12V supply for extended periods of time... the 5V regulator may burn out if you're feeding it at a too high voltage.
